10 Unmissable Recipes Recommended By Popular Vegan Bloggers

Summer Quinoa Salad (Vegan)

It is fall and you’re a vegetarian – everyone seems to be cooking only meat, you have gotten pretty tired of the vegan meals you know how to prepare and you have run out of ideas to try out something new.

Ariel Knutson of “The Kitchn” asked her favorite vegan bloggers to share their most popular vegan recipes on their site. So they took a time off from the world of optimizations and analytics to share their wonderful recipes.

Here below we present you 10 unmissable recipes as recommended by those popular vegan bloggers, which originally appeared in The Kitchn. One thing to observe is that kale, squash and lentils are recurrent themes in these recipes.

1. Lacinato Kale and Pecorino Salad (101 Cookbooks)

1
This salad is easy to prepare without being plainly obvious. Pecorino cheese, toasted pecans and shredded Brussels sprouts are added to finely minced Lucinato kale. It fits perfectly with the season as well.

Meanwhile, lemon-tahini dressing is used to enhance the taste and take rawness off of the kale. It’s a great way to enjoy dinner. It’ll be even better if you choose pebbly leafed and dark Lucinato kale. (Click here to view recipe.)

2. Spaghetti Squash Noodle Bowl with Lime Peanut Sauce (The First Mess)

2

This very unique and palatable recipe requires spaghetti squash, nuts, some broccoli and kale along with peanut sauce and lime. It’s a perfect way to treat yourself and your loved ones for the lunch.

Although the list of ingredients required to prepare this recipe seems to be rather long, most of the ingredients are easy to find and you’ll notice that you already have most of them in your kitchen. (Click here to view recipe.)

3. Summer Vegetarian Tacos with Avocado Cream (Naturally Ella)

3

This easy and perfect recipe for dinner only requires you to fill a tortilla with lots of roasted vegetables and spread some goat cheese and avocado cream over it.

This is a very flexible recipe and you can use ingredients at your preference and convenience. You can add a bit of black beans or chickpeas if you want to have some protein in the diet. (Click here to view recipe.)

4. Spiced Vegan Lentil Soup (Cookie and Kate)

4

This splendid lentil soup recipe can be made with very simple and easy-to-find ingredients. All you need are some green vegetables, lemon and some spices. The flavor of this recipe is very fresh and lively.

One of the spices that you must not miss is black pepper. Besides that, it is another flexible recipe and it offers you a lot of space to experiment. (Click here to view recipe.)

5. Lentil “Meatballs” in Lemon Pesto (Sprouted Kitchen)

5

This is another lentil recipe in our list. Lentils are first cooked and then turned into delightful “meatballs”. Now, cook them in light lemon pesto sauce and you can serve this delicacy along with green vegetables or even pasta.

Be careful not to use too much of the pesto sauce as it’s quite acidic. You can always adjust it to fit your personal taste but it’s better to add water to the pesto sauce to thin it. (Click here to view recipe.)

6. Spaghetti Squash Pad Thai (A Couple Cooks)

6

This vegetarian pad Thai recipe is another simple-to-prepare recipe that only requires you to start with spaghetti squash as a base and you are free to choose pretty much everything for the toppings as per your preference.

This is a Thai take on spaghetti squash, which is otherwise commonly treated in Italian style. However, it’s not an old-style pad Thai dish but a delightful variant of it that doesn’t involve noodles. (Click here to view recipe.)

7. Broccoli Fennel Soup (With Food and Love)

7

There are lots of greens in this soup. Raw cashews, lemon juice, sea salt, black paper and some water are blended until smooth first. Then, add in some roasted broccoli, fennel, kale and garlic and blend it again.

While serving, the soup is best when topped with some olive oil. Finely shredded fennel leaves and lemon zest along with black pepper can also be added to make it even better. (Click here to view recipe.)

8. Kimchi Ramen (Happyyolks)

8

There are lots of apple, ginger, miso and eggs in this vegetarian ramen broth. The kimchi makes the real difference as it makes this recipe very spicy. This unique meal is perfect for dinner.

The broth is prepared by mixing the ingredients other than miso first and letting it cook for about half an hour. Miso is added after that. Then, noodles are cooked and added to the broth along with green onions and poached eggs. (Click here to view recipe.)

9. Kabocha Squash, Fennel and Ginger Soup with Spicy Coconut Cream (Dolly and Oatmeal)

9

What makes this recipe unique is the addition of spicy coconut cream and the fennel. It’s a perfect way to treat your guests as this is not much difficult to prepare on one hand and tastes great on the other.

All the different varieties of squash work well for this soup just well. Fennel seeds and ground ginger can also be used in case you don’t find garden-fresh fennel and ginger. The soup is rich in spices such as garlic and fresh herbs. (Click here to view recipe.)

10. Roasted Acorn Squash and Apples with Quinoa, Kale and Tahini Dressings (Edible Perspective)

The recipe is rather simple to prepare but a very tasty treat for any palate. There’s a perfect balance between the sweetness of the likes of apple and the savoriness of the likes of cayenne pepper. (Click here to view recipe.)
